Ingredients

  • 2 cups spelt flour
  • 1 tbsp baking powder
  • 1/2 tsp sea salt
  • 1/2 cup brown sugar, honey, or maple syrup
  • 1/4 pure stevia
  • 1 1/4 cups plant-based milk
  • 1 1/2 tbsp lemon juice
  • 1 tbsp vanilla extract
  • 1/4 cup oil

Instruction

  • Preheat the oven to 350 degrees F
  • Whisk the liquid ingredients in a bowl and let sit for 10 minutes
  • Mix up the dry ingredients and combine well with the wet ingredients
  • Oil your muffin tray and add your batter
  • Bake for 25-30 minutes or until the muffins are risen and cooked through
  • Let cool down for at least 10 minutes
  • Enjoy!
