Ingredients

  • 2 sweet potatoes
  • 2 cups oat flour
  • 2 tbsp baking powder
  • 2 tsp cinnamon
  • 2 flax eggs
  • – 1 1/2 plant-based milk
  • 2 tbsp cooking oil
  • 2 tbsp vanilla extract

Optional toppings:

  • 1 tbsp peanut or almond butter
  • 1 tsp maple syrup or honey
  • Fruits

Directions

  • Cook the sweet potatoes. Roast for 45 minutes at 400 degrees F. Cool them and mash them.
  • Mix up the dry ingredients powder
  • Mix up the wet ingredients together.
  • Mix up the dry and wet ingredients together very well
  • Pre-heat your waffle maker
  • Pour a small amount of batter into each quarter section of the lower cooking surface and cook until crispy
