Ingredients:

  • 2 cups oat flour or other
  • 2 1/2 cups plant-based milk (plus extra if you use oat flour)
  • 1 1/2 tbsp flaxseed meal
  • A pinch of sea salt
  • 2 tbsp sweetener (optional)
  • 2 tbsp cooking oil (optional)
  • 1 tbsp vanilla extract (optional)

Note: add a little more milk with oat flour because it thickens fast

Instructions:

  • Mix up all the ingredients together very well. The consistency should be a little more liquid than for the pancake one but still a little thick
  • Heat up a large non-stick pan on medium-high heat, you can optionally add a little cooking oil
  • With a large soup serving spoon, place some of the crepe mixture in the hot pan and spread the mixture to form a circle
  • When you see a little bubble starting to form on the surface and it starts to dry, you can turn the crepe.
